On the left is the standard needle tip probe.  This is suitable for penetration of soft objects for determination of internal temperatures.  The center image shows the surface probe, typically used for cooking surfaces, environmental surfaces in process management and calibration of IR thermometers.  On the left is the air probe, which is "waived" for a few seconds to determine air temperature, or held under an air stream.
