Control of
Cross Contamination
 The first line of defense in
movement control is to prevent harmful bacteria from moving from one food
type to another (a significant source of cross contamination). Our cutting
board sets help to address the issue of contamination from one
food category into another by segregating the cutting of these foods by
using distinct preparation surfaces.
 The
most significant source of contamination is from hands. No amount of cleansers or
automated machinery will ever replace the careful washing of hands by a food
preparation or food handling worker. So, the key is awareness and
training. Our training kits drive the point home and are effective.
Apply "germ potion'' to hands, then wash.
The U/V lamp will make unwashed areas glow in a darkened room. These kits
also include "germ powder'' for cross-contamination training.

of microbes into food. When food is prepared on surfaces, the food
residue is an ideal growth medium for bacteria. Sanitizing these
surfaces is a daily necessity. We help with tests that assure the
